UOH leads WP3 in the IMPROVE project. UOH will work on modifying, stabilizing, and improving the sensory properties of alternative proteins, with a particular focus on non-animal sources. Together with In.BIO, UOH conduct sensory tests on humans to evaluate the acceptability and quality of these alternative proteins, contributing significantly to the project’s goals of promoting sustainable, non-meat protein options.
